It’s that time of year again. The weather begins to colder, night sets in a little earlier and we begin to trade our outside lounging for indoor gatherings. But, as with everything in 2020, our house parties may not look like what they used to. Instead of dancing cheek-to-cheek, we may be dancing on our own. However, Summit Brewing is here to ensure that while you may be dancing with yourself, at the very least you won’t be dancing empty-handed.

 

Summit House Party Variety Box Vol. 2 is returning for its second year with some great brews included.

Track 1. Don’t Stand So Close To Me

Of all our beers in the House Party Variety Box, our Summit Sága IPA just may be the only one aggressive enough to call out any party-goer not abiding by the 6-feet rule. With its combination of Rakau, Citra, Centennial, Amarillo and Bravo hops, our signature IPA is assertive and bold. While this epic hop mix creates bitter flavors, tropical aromas of kiwi, passion fruit and apricot add a balanced sweetness. So, while Sága IPA may not hesitate to tell you to back up, they’ll still do it nicely.

Sága IPA

Description: Named after the Norse goddess Sága, drinking companion of the God Odin. Featuring a divine tropical fruit hop aroma and clean, assertive bitterness.

ABV: 6.3%

Hops: Centennial, Amarillo, Citra, Bravo

Malts: 2-Row Pale, Crystal

 

Track 2. Tubthumbing

Fans of the 90’s band Chumbawamba may recall this hit in which the singer shares stories of “taking a lager drink.” Well, we’ve got that covered. The lone lager in our House Party Variety Pack, Summit Keller Pils, is a lager you definitely want to drink. Highly awarded and favored among our brewing staff, Keller Pils is a traditional, unfiltered German Pils. Light flavors of citrus, honey and melon blend with a slight floral notes and bready aromas to create a clean, balanced finish. It’s so good, it may leave you singing songs that remind you of the good times!

Description: Brewed with traditional Tettnang hops and the modern German variety Huell Melon, Keller Pils offers spicy floral notes, balanced citrus bitterness, and malty-sweet and honey undertones from Weyermann Barke Pilsner Malt.

ABV: 5.1%

Hops: Tettnang, Huell Melon

Malts: Weyermann Barke Pilsner

 

Track 3. I Will Survive

After a brief summer hiatus, Summit Great Northern Porter has returned! The embodiment of this ballad, Great Northern Porter not only is coming back after a break but also is one of just two beers we continue to brew from our original 1986 line-up (Summit Extra Pale Ale being the other). This slightly sweet, slightly bitter brew maintains its roasted malt flavors with notes of caramel, coffee and chocolate. We are switching things up slightly, as this porter will now only be available in cans. Still the same great taste but with a sleek new look, Great Northern Porter is currently available exclusively in the House Party Variety Pack. In October, look for it in it’s own packaging!

Summit Great Northern Porter

Description: Brewed with roasted malts that offer up caramel, chocolate and coffee notes, Summit Great Northern Porter is a slightly sweet, slightly bitter brew. A complex malts and bold hop blend give off a toasted, chocolatey finish.

ABV: 5.4%

Hops: Northern Brewer, Fuggle, Cascade

Malts: 2-Row Pale, Caramel, Chocolate, Crystal

 

Track 4. Someday, We’ll Be Together

As fans of our Summit Dark Infusion Coffee Milk Stout know, it’s important not to give up hope that one day things will return to normal. Originally brewed as part of our Unchained Series in 2016, Dark Infusion is the only Unchained beer to ever make a comeback. It was so popular in fact, it’s been brewed three times since. In its fourth reincarnation, we’ve changed up the recipe slightly. This year, the cold-brew coffee is provided by Minneapolis’ Big Watt Beverage. Available exclusively in the House Party Variety Pack, this brew is a reminder to us all that while we may have to wait – longer than we may want to – we will be together again.

 

Summit Dark Infusion Coffee Milk Stout

Description: A rich, full-bodied imperial milk stout with sweet, roasted notes from six specialty malts, Dark Infusion features kettle additions of lactose for additional sweetness and body.

ABV: 6.8%

We’re excited to announce our newest addition to our portfolio from Duluth, MN– Wild State Cider.

After meeting at a summer camp as counselors in 2008, Adam Ruhland and Andrew Price hit it off with their shared passions for wild places and casual adventure. 10 years later they’re starting another casual adventure, coming to Duluth, MN in 2018. Adam and Andrew’s combined background in fermentation, marketing, and patience are just what it takes to start something from nothing.

‘Tis the season for winter warmers – beers released around Christmas time for sipping over the cold months ahead.

 

A few of these beers might satisfy your Christmas cookie cravings; they have hints of oatmeal and nutmeg, cinnamon and ginger, others are toasty and dark with a bit of smokiness.  However, most are simply well-made ales with rich malty flavors and enough alcohol to warm you up. There are quite a few winners here – I hate to remind you and myself, but winter is just beginning, and a few of these beers might help us make it through the long winter ahead.

 

 

Samuel Adams Winter Lager 

Now Crisper & Brighter – For colder nights, lean on Winter Lager, a crisp bock with citrus and spices. The clementine orange aroma is especially refreshing during holiday meals and celebrations.

5.6% ABV, 22 IBUs

 Summit Brewing Co. Winter Ale

Comforting as a down blanket. And way better tasting. Floral, spicy, bready and sweet, Summit Winter Ale is a cozy brew made specially to help add warmth to winter nights. Brewed with English and German hops that offer floral and spicy notes, it’s balanced by roasted and pale malts. Based on the British Winter Warmer style, this brew’s toasted malt flavor mixes with hints of espresso, caramel and black cherry for a velvety smooth finish.

6.2% ABV, 40 IBUs

 

Fargo Brewing Co. StarLite Milk Stout

Come gaze upon our newest brew, StarLite Milk Stout! This creamy dream of a dark beer is built on a base of rich toasted Munich and Black Malt for an abundance of aromatic coffee, chocolate, and a hint of smokiness that provides a savory but subtle full-bodied backdrop. Bell’s Bright White Ale

An alternative to dark and heavy winter warmers and stouts, Bright White is a stylish and refreshing Wheat Ale. Fermented with a Belgian ale yeast, this blend of barley and wheat malts yields a mixture of clove and fruity aromas, all without the use of any spices. Deliberately brewed to retain a cloudy appearance, Bright White is a beer for embracing winter.

Bell’s Christmas Scotch Ale

Inspired stylistically by traditional non-peated Scotch Ales, Christmas Ale is rich and malty with notes of caramel and a warm finish. Certain to make any occasion festive, or at least a bit more bearable. Enjoy with the company of friends and family.

August Schell Oat Starkbier

As every Midwesterner knows, no two snowstorms are ever alike and that’s what makes this brew so special. This year’s Oat Starkbier is a malt-driven dark lager meant for the coldest of winter nights. The creamy mouthfeel from the oats smooths out some of the toasty notes, amplifying the rich Munich malt tones before a crisp finish.

6.1% ABV, 25 IBUs

 

Fulton Brewing Co. Snow Emergency Stout

This full-bodied stout was brewed with ingredients from Proximity Malt in Southern Colorado.  Barley malts, including chocolate, black, & dark caramel malts, mix with chocolate wheat & malted oats to deliver a smooth mouthfeel with enough complexity to sip and savor.  Layers of dark chocolate on the nose and tongue combine with the healthy addition of Bravo hops to complement the residual sweetness from the specialty malts.

6.0% ABV, 30 IBUs

 

Odell Isolation Ale

A funny thing happens here around summer’s end—our eyes start searching the skies for those first fall flakes. As we welcome autumn’s first snow, we celebrate the return of Isolation Ale—a sweet-caramel malty ale balanced by a subtle crisp hop finish. Whether you ski, shred, or shoe, it’ll inspire you to make first tracks.

 Empyrean Brewing Co. Winter Wisdom Hazelnut Brown Ale

Wise up. Look deep within this brown ale to breathe in caramel aromas, taste hints of roasted hazelnuts and find a smooth, creamy finish. Best paired with old friends, festive tunes and New Year’s Resolutions. Also great with beef, grilled vegetables, Southwest flavors and caramel desserts.

Brewed with rich, roasty malts and a creamy, nutty addition of peanut butter for a dessert-like Porter with a chocolate peanut butter cup flavor.

Lager Braised Short Rib with Rosemary Dumplings,

Local Mushrooms and Parsnip

 

3 each 4-6 ounce Bone In Beef Short Rib                               2 cups All Purpose Flour

1 Tablespoon Canola Oil                                                         1 ½ teaspoon Kosher Salt

1 Cleaned White Onion Sliced ½ inch thick                            1 Tablespoon Baking Powder

10 Cloves Garlic Sliced Thinly                                                 1 Tablespoon Olive Oil

3 Sprigs of Thyme                                                                   1 cup warm water

3 Each Bay Leaves                                                                  ½ cup finely chopped Rosemary

2 Sprigs of Rosemary                                                              16 ounce oyster/maitake mushroom

2 Bottles Sam Adams Winter Lager                                       2 each peeled, large dice parsnip

3 Cups Chicken/Beef Stock

 

For the Braised Short Rib:

  • Preheat the oven to 350 degrees.
  • Heat a Large Pot with the canola oil on High Heat.
  • Generously rub the short rib with salt and pepper.  Sear the short ribs on all sides to a dark golden brown. (this gives the final product a much better flavor)
  • Remove the short ribs from the pot and reduce the heat to medium.
  • Add the onion, garlic, thyme, rosemary and bay leaves.  Cook until the onions become tender with a little color.  Add the lager and stock.
  • Place the short ribs back into the pot and cover with a lid. Place in the oven for 3 ½ hours or until the short rib pulls away from the bone with a fork.

For the Dumplings:

  • Mix the flour, salt, baking powder and rosemary in a mixing bowl.  Add the olive oil and water and mix until a cohesive ball forms.  Do not overmix or you will have bouncy chewy dumplings.
  • Place dough in fridge until later.

For the Vegetables:

  • Cut the ends off the mushrooms.  Toss the mushrooms and parsnips in a little canola oil, salt and pepper.  Place on a lines baking sheet and put in the oven for 13-15 minutes.
  • Remove and wait to plate.

To Finish:

  • Place the Pot of short rib back on a burner at high heat.
  • Remove the short ribs onto a plate.  Once the braise is boiling add 2 ounce balls of the dumpling dough into the braise.
  • Cook for roughly 5 minutes or until the dumplings have some buoyancy.
  • Turn the heat off and place the vegetables and short ribs back into the liquid.
  • Plate in a bowl everything and eat away!!

Pumpkin Beer Season is upon us. Although, it seems to come earlier every year, I do look forward to a selection of pumpkin beers and drinks in the fall.

Whether or not you appreciate a pumpkin spice latte, there’s a lot to love about pumpkin beer, because the category is so diverse. Whatever you’re looking for; spicy, sweet, bitter, dark, or all of the above you’ll find one to enjoy.
